Pat's Cast Iron Skillet Apple Pie




I am so excited to share today's recipe with you! It comes from my sweet friend Pat. I met Pat at our local herb club, and right away I fell in love with her kind and caring personality.


Pat lives with her husband in a cozy little home on 14 acres that she shares with her daughter and family. She's a gardener, herb enthusiast, and bee keeper extraordinaire. Pat is also a fabulous cook! I've had the opportunity to have her homemade honey wheat bread (yes she makes it with her own honey), ham and bean soup, and potato leek soup. They were all amazing! Her Cast Iron Skillet Apple Pie is no exception! Pat served me this pie several times, but my favorite was after she took me on a tour of her home and surrounding property. We finished the tour with a full lunch, and then enjoyed apple pie topped with homemade whipped cream. It was heaven on a fork!


I made this pie for a Super Bowl party and it was gone within 10 minutes of setting it on the counter (hence why I didn't get any good photos). I recommend serving the pie warm with a dollop of homemade whipped cream.

 

Cast Iron Skillet Apple Pie


Ingredients:

  • ½ cup of butter

  • 1 cup brown sugar

  • 5 Grany Smith apples, peeled, cored and sliced

  • 3/4 - 1 cup white sugar (plus sugar for sprinkling the top of the pie)

  • 2 teaspoons cinnamon

  • A dash of nutmeg

  • 3 pie crusts (homemade or store-bought will work)

Directions:

  1. Preheat oven to 350 degrees

  2. Place 1/2 cup butter into heavy cast iron skillet, and melt butter in the oven. Remove skillet and sprinkle with brown suger, return to heat while preparing apples.

  3. Toss apples with white sugar, cinnamon and nutmeg. Remove skillet and place 1 pie crust on top of brown sugar. Put half the apples on top of the pie crust in the skillet. Put the next pie crust on top of the apples and add the remaining apples. Place the third pie crust on top of the apples. Sprinkle top of crust with sugar and dot with butter. Cut 4 skits in top of crust for steam vent.

  4. Bake in oven until apples are tender and crust is golden brown. About 45 minutes. Serve warm.
